The name “Les Fumées Blanches” comes from the morning mists that blanket the Sauvignon Blanc vines, which grow in the Gascony region between the Atlantic and the Pyrénées, and around the foot of the Montagne Noire.

Winemaking
The grapes are machine harvested between 4 and 9 AM to take advantage of the cool temperatures and reduce any risk of oxidation. Skin-contact maceration (8–12 hours) and/or cold settling (8–10°C) for several days, followed by pneumatic pressing. Fermentation takes place at between 16 and 18°C using selected yeasts to bring out all of the typicity of Sauvignon Blanc. The wine is aged on fine lees for several weeks before blending and is not exposed to oxygen throughout the entire winemaking process.
Tasting notes
The nose features a fresh, fruity profile marked by aromas of tropical fruit (passion fruit) along with citrus notes (grapefruit, pomelo). Lively and generous on the palate with remarkable length and a delicate saline touch on the finish.
